I Can't Think of a Better Time To Make This!

Happy Weekend, Friend!

This time of year is a lot of things and one of those things is chili & cornbread! I'm a sucker for a good bowl of chili this time of year, and I love to freeze leftovers for lunches or other recipes (like chili mac!) another day.

This week, I published two new recipe refreshes to update some of my favorites. Starting off with a budget friendly chili with a kick!

better than ever

VEGETARIAN CHIPOTLE BLACK BEAN CHILI

This budget-friendly recipe uses pantry staples, a delicious blend of spices, and a few fresh veggies for the best color and flavor. (I love to toss leftovers into a bowl with rice, cheddar cheese & avocado!)

better than ever

GLUTEN-FREE MAPLE CORNBREAD

This naturally sweetened cornbread is the perfect compliment to chili & soup, but it's also a great substitute for rolls at Thanksgiving! We love this one so much.

PRIZE-WINNING PUMPKIN CHILI

This yummy chili gets rave reviews every year from folks who bring it to work potlucks, neighborhood chili cook-offs, and Halloween dinners. It's thick, hearty, and always a hit.

These easy cornbread muffins are the perfect size, with a subtle sweetness and a tiny little hint of spice. They're SO good with soup & chili!

SALSA VERDE CHICKEN CHILI

For folks who want a lighter take on chili night, this white chili is always a winner! It's done in less than 30 minutes, and tastes so deliciously different than a red chili!

Loving Lately

  1. Nobody Wants This. I've been saving the new season to watch this weekend, and I cannot wait. Find me with an eye mask on, a plate of girl dinner in hand, and my favorite candle under my candle warmer.
  2. An Easy Analog Craft. I've been inspired by all the colorful, chunky paper chains I've seen all over IG & TikTok, and decided I'm making some for Christmas. My paper arrived this week, and I can hardly wait to start. I'm making mine with 12x12 patterned scrapbook paper and cutting each piece into 6 (2-inch) strips with my paper cutter. I put on an audiobook and finished almost all the prep in about 40 minutes. If you don't live by a great scrapbook store, this online shop has TONS of options & ships fast!
  3. Sneaky Nutrition Tip. I've meal prepped quinoa salad a few times recently, and have taken to tossing a cup of frozen edamame in with the quinoa as it cooks, then stirring in a handful or two of finely chopped spinach when it's still hot. It's an easy way to sneak in some fiber, nutrients, and protein!

What are YOU loving? Anything I should try?

Happy Weekend, Friend! Happy Halloween weekend to those who celebrate! We're making Monster Face Smoothies in the morning and pumpkin shaped pizzas with our homemade pizza dough for dinner. Then on November 1st, I'm putting up my Christmas tree. Yes, it's early and yes, it brings me so much joy I don't mind being one of the early birds. November has so much delicious food coming our way (Thanksgiving side dishes! Desserts! Holiday breakfasts + treats!), but today, I've got a brand new recipe...

Happy Weekend, Friend! We've been cooking our way through this month's meal plan, and one thing my kids are SUPER looking forward to this weekend is a batch of these juicy Chicken Parmesan Burgers. One of my kids doesn't like beef, so chicken burgers are always a win at my house, and this combination is UNBELIEVABLY good. They're a spin on our Chicken Parmesan Meatballs, and we love them so much they always need a spot in our rotation in one way or another. new recipe CHICKEN PARMESAN BURGERS...

Happy Weekend, Friend! When I had two toddlers at home and we were in the thick of the picky eating phase, I remember everyone telling me that my kids would eventually like vegetables. Well, I would formally like to request a refund, because...now I have two teenagers who still don't love vegetables. For SURE it's better than when they were toddlers, and I still present a weekly rotation of veggies with dinner, but if there's one thing that always comes through for me, it's got to be...
