Happy Weekend, Friend!
When I had two toddlers at home and we were in the thick of the picky eating phase, I remember everyone telling me that my kids would eventually like vegetables.
Well, I would formally like to request a refund, because...now I have two teenagers who still don't love vegetables.
For SURE it's better than when they were toddlers, and I still present a weekly rotation of veggies with dinner, but if there's one thing that always comes through for me, it's got to be potatoes.
Potatoes sometimes have a bad reputation, but they actually have quite an array of nutrients (like fiber, and potassium)! Plus, there are ENDLESS ways to flavor them, and this week's new recipe is a good one to try...

The magic is in the method for these baked fries! They're made with simple, nourishing ingredients, but have a satisfying crispy crust without any deep frying. They're one of my most viral recipes this year!

PARMESAN ROASTED POTATOES
These smoky, savory potatoes have AMAZING flavor, thanks to plenty of parmesan cheese, along with staples like garlic & onion powder, and smoked paprika. SO GOOD.

WHAT I'M MEAL PREPPING THIS WEEKEND

CHICKEN ENCHILADA SOUP
High in protein AND fiber, this flavorful soup freezes like a dream. I make a batch on weekends, then freeze it in jars in 1 1/2 cup portions so I can pull one our for lunch any time I need one!

BLUEBERRY CHIA PUDDING
Yes, I'm still making this on a very regular basis. SO GOOD. Lately, I've been drizzling it with a bit of natural peanut butter and sprinkling with crunchy granola. It's DELICIOUS (and can be made with frozen blueberries!)

3-ISH WEEKLY PICKS
Life Lately
- East of Eden. I've read other John Steinbeck novels, but not this one. I wanted to read it before watching the series with Florence Pugh. It's a bit brutal, but seeing all the thoughtful discourse around the movie is giving me high school English vibes, which I'm loving. Have you read it or seen the movie? Tell me!
- Klask. I got this game for Christmas a few years ago, and we pulled it out while my parents were here this week. It never misses! It's so fun and always delights guests and friends.
- Double-Checking voter registration! It doesn't take long, and now is the perfect time, so you can take care of anything you need to before voting next month!
What are YOU loving? Anything I should try?
